The Story of the American Diner

1. A Rolling Start

The concept for the diner began when a man named Walter Scott converted his horse wagon into a food car to cater to local workers who were hungry after a late shift. In the late 19th century and early 20th, diners began to spread in the form of these mobile cars with an ice box and basics like eggs and coffee. 

2. The World Wars

restaurantDue to the labor shortage on the home front in World War I, large groups of women left the home to take men’s place in factories and other roles. As a result of their increased mobility and broadened status, diners began to increasingly cater to women after the war. Managers installed floral arrangements and advertised their cooking as having a home touch. 

After World War II, there was another big shift with the mass movement of returning GIs and their families to the suburbs. Diners swept in to become the All-American dining restaurant you could count on at any time of day or night. Managers installed booths and counters. The metallic looking exterior fit the images of the suburbs–clean and safe. 

3. Modern Day

In recent decades, as food establishments have become ever more specialized, diners have earned an iconic spot in American culture as a home away from home where you can eat, drink, or just hang out with your friends.
