Gelee opened his own bakery in Paris in the 17th century, and the pastry became an immediate hit. When a group of Danish bakers went on strike in the 19th century, Austrian bakers came to the country to cook—and brought with them a wide range of their favorite treats, including the beloved Danish pastry. As for the name’s popularity—and despite its French origins—it’s possible so many Danish bakers traveled and settled throughout the world they simply introduced it with that moniker.
