3. Make Quinoa Salads

Quinoa goes great with just about anything you want to add to it. The flavor on its own is as inoffensive as rice, but it has the added bonus of a nice texture. Treat it like a salad, and add dressings, veggies, and something a little crunchy or sweet, like sunflower seeds or dried cranberries.

4. Cook Quesadillas

Another super versatile option that can go far beyond meat and cheese, quesadillas are an easy way to hide healthy foods your kids assume they won’t like. Make the quesadillas hot or cold, and serve with some dipping sauce.

5. Put Together Bento Boxes

Another fun meal to create together, the Japanese tradition of bento boxes provides a different way to serve lunch and try small amounts of multiple items. Traditionally, Japanese mothers decorate their children’s bento boxes with foods in fun shapes and patterns. Decorated or not, slip in a new veggie next to a few of your child’s favorite staples and see what they think.
